Jammin’ Banana Oatmeal

Jammin’ Banana Oatmeal


  • 4-6 strawberries, (depending on size and preference) stemmed and diced
  • 2 TBSP water
  • drizzle of agave or other sweetener
  • 1/3 cup oats
  • 2/3 cup water
  • 1 med frozen banana
  • Optional: 1 TBSP coconut butter

Begin by placing the strawberries and water in a small pot over medium-high heat. Start mashing the strawberries with a fork and combining them with the water (this will be a lot easier to do once everything heats up).  As soon as the mixture starts simmering, stir in the sweetener and let the whole thing thicken for a few minutes, stirring occasionally.

Meanwhile, begin cooking 1/3 cup oats in 2/3 cup water and place the frozen banana (and optional coconut butter) in a blender. Blend up the banana till it becomes smooth and ice cream-like, adding non-dairy milk or water if needed.

Go back to the jam, stir it again and take it off the heat. Let it sit for two minutes to thicken.

Place your now cooked oatmeal in a bowl, then stir in the strawberry jam. Pour your banana “ice cream” on top and eat up!

  2. I actually remembered to freeze bananas last night. I didn’t use coconut butter because I never heard of it before reading your blogs and I used Silk Very Vanilla Soymilk in the blender. We actually had agave nectar and I never knew what it was for so this is the first time I used it. I made enough for the whole family and my sister Reese helped toward the end to make sure the oatmeal was done and she also added blueberries as a topping.
