Grilled Tempeh & Tomato Sandwich
- 2 slices clean whole wheat bread
- Humnut sauce (hummus + nutritional yeast + water) or feel free to use whatever sauce you have on hand. Humnut is just my preference.
- 1/4 avocado
- A few slices of tempeh
- 4 tomato slices
- coconut oil
First spread coconut oil on one side of each slice of bread. Next, layer the humnut sauce and tomato on one slice of bread, (NOT the coconut oil side; the other side) and spread the avocado and tempeh on the other slice of bread. Put them together as a sandwich, then grill on a sprayed pan, coconut oil side down. Eat up!
