Cherry-Orange Chia Pudding

  • 2 tablespoons chia seeds
  • 1/4 cup freshly-squeezed orange juice (I cut my orange in half and squeezed it like a lemon)
  • 1/4 cup unsweetened vanilla almond milk (or other milk of choice)
  • dash of salt
  • splash of vanilla
  • sweetener of choice, to taste (I used NuNaturals Vanilla Stevia Drops)
  • 1/2 medium orange, peeled and diced
  • 5-7 cherries, pitted and quartered
  • optional toppings: shredded coconut and granola

Combine chia seeds, orange juice, almond milk, salt, vanilla and sweetener in a bowl. Stir well, and let sit 20-30 minutes or overnight until thickened. In the morning (or later) stir in the orange pieces and cherries. Top with optional shredded coconut and granola, then enjoy!
