P-I-Z-Z-A

Hey hey!

Wow, so major fail on my part. I had no idea how busy I would be in Utah, and I had no idea how little access I would have to a computer. I’m so sorry for the lack of posts, but sometimes I just gotta live my life and not be tied down by a computer. πŸ™‚

My week in Utah was… bittersweet. I had such a wonderful time visiting family and friends, but it was one of THE hardest trips in my whole entire life. I had to say goodbye to my older brother for two years which was beyond difficult. He is one of my closest, best friends and I miss him more than words can say. When we finally left Utah, it was also hard to say goodbye to my sweet 86-year-old grandma. She is in a nursing home, and she is so dear to me.

Aside from the sadness, I did have a lot of fun. My last few days with my older brother were excellent, and it was great to spend so much time with my family. The Lord has blessed me with some strong people in my life, and I look forward to becoming even closer with them over these next few years. πŸ™‚

Well, I guess I’m due for a recap, eh? I’ll go ahead and finish the post I meant to post before I left! Goodness gracious.

Because of the newly-released Larabar flavors, cookie dough has been the topic of many bloggers‘ posts. I then, of course, had it on the brain, so I decided to satisfy my craving.

I really didn’t have a set recipe; I just kind of took little bits here and there from other recipes. Basically it was:

  • Raw cashews
  • Raw almonds
  • 2 pitted dates
  • Sprinkle of sea salt
  • Dark chocolate chunks

all processed together in a mini food processor and formed into a ball. Yes, I only made one serving… I felt like experimenting. πŸ™‚

I didn’t quite believe that nuts and dates could achieve the same flavor as flour, butter and sugar, but I was pleasantly surprised at how much it DID taste like cookie dough. It was very good, and I would for sure make it again. πŸ™‚

Hmm, let’s see. For one of my breakfasts, I made Katie’s Strawberry Shortcake in a Bowl. I make Katie’s recipes a lot..

1/2 cup cooked oats blended together with some strawberries, almond milk and NuNaturals Stevia. Topped with some pecans and a little bit of dark chocolate. πŸ™‚ Holy yum. Also, that is a chocolate protein shake on the side.

Pecans have quickly become one of my all-time favorite nuts. Just sayin’.

On another note, I drove for the first time a few weeks ago! My dear friend and “big sister,” Rachel, took me to practice in a parking lot and it was a lot of fun. πŸ™‚

After driving for about an hour, we came home and made pizza from scratch. We had made the dough before we left so it could rise while we were gone, and it was ready when we came back!

I wish I could find the exact recipe we used, because it turned out sooo well. I have it bookmarked on the other computer, but it’s currently down. Darn. The crust basically consisted of (if I can remember correctly. It was over 2 weeks ago):

  • 4 cups whole wheat flour
  • 2 tsp quick-rise yeast
  • 1/4 cup honey
  • vital wheat gluten
  • salt
  • olive oil
  • warm water

We rolled out the dough on my countertop, put it in a jelly roll pan–we wanted square pizza–and topped it with some sauce.

Next, the toppings! Squash, zucchini, green/red peppers, spinach, tomatoes, and pineapple for me. Rachel was a little weirded out by pineapple on pizza, but I love it! What about you? Are you a POP (pineapple on pizza) person or do you think the tropical fruit was meant to be eaten on its own?

Chopping some veggies. πŸ™‚

I’d never cut peppers like this before, and I was quite amused by the flower-like shape they took on. What can I say, I’m easy to please.

Our beautiful pizza all ready to go in the oven. For cheese, we put mozzarella on Rachel’s half and Daiya Mozza “Cheese” Shreds on my half.

Oh my heck, have you other vegans/dairy-avoiders ever tried Daiya? I picked this bag up at Whole Foods and I am absolutely, positively in love. It is all-natural and it tastes incredible. I was amazed at how much it tasted like mozzarella, and don’t even get me started on the melting properties of this stuff. When I put it on my pizza, it melted perfectly and came out creamy and delicious. I was so surprised at the texture, which almost resembled a smooth, slightly thicker alfredo sauce. Ahh. I can’t wait to try the cheddar.

Daiya + Food Should Taste Good Multigrain Chip nachos.

The oven does a much better job at melting than the microwave does.

But back to the pizza. After 25 minutes or so in the oven, our beloved pizza was done!

You can tell which side is mine by looking for the pineapple. πŸ™‚

My delectable half.

Rachel’s half, which I’m assuming was delectable as well.

Oh. My. Goodness. Hands down the BEST pizza I have ever had. Homemade truly is the stuff, kids.

Made-from-scratch, all-natural, fluffy whole wheat pizza dough; my favorite veggie toppings; and creamy, smooth Daiya cheese. Um, can it get any better? I think not. Heaven.

Uhh, here’s some random pancakes I ate. I have some pictures of them, but I don’t remember them being all too exciting. I think there were strawberries and blueberries in the pancakes.

Oh, the day after my wonderful pizza adventure, our wonderful, generous friend offered to cut my hair! I went from this:

To this:

Lol, I look so serious. Hooray! This is the first time I’ve had bangs since I was 12-years-old and I am so happy with them. I have wanted this cut (shorter, lots of layers and side-swept bangs) for a very long time, but I never got it because I was afraid it wouldn’t look right on me. I’m very pleased with it!

My mom got her hair cut, too, but I don’t have any before pics for you. Here are some after ones though, because we recently got family pictures taken. πŸ™‚

From left to right: my little brother Dakota, me, my mom and my older brother Brady.

We are a happy family.

I love them. A lot.

Me and my older brother, Brady. I miss him. ❀

Can’t touch this. πŸ™‚

Hahaha, I love this picture. We are certainly goofballs.

❀

In parting, here are some random doggy-love pictures for your viewing pleasure.

Chansey, our lab mix, is on the floor, and..

Schatize, my pomeranian, is on the couch. His name is pronounced shot-see; it’s German for “my treasure.” πŸ™‚

Also, in case you were wondering: yes, Chansey IS named after the Pokemon. Long story. πŸ™‚

Well, I think that just about wraps this recap up. It’s gettin’ pretty long, but I hope you enjoyed it. I have missed blogging and all my wonderful blog friends, so hopefully I’ll get a few more posts up this week. I’m leaving again next week for a homeschool camp, but perhaps I will schedule some posts to go up. That’d be good. πŸ™‚

By the way, my college classes officially started yesterday! I got all registered and started doing the work. For those of you who didn’t know, I’m taking online community college classes this semester and I’m very excited about it. The state of Texas pays for me to take two “dual-credit” classes, which basically means that I can take college classes as a high school student. The classes will not only count as high school work, but they will also count as college credits. Pretty cool, huh? I’m taking U.S. History and Kinesiology: Personal and Community Health. In the third or so week of Kinesiology there are two chapters devoted to health and nutrition–needless to say, I am very excited.

Question of the Day: Have you ever made homemade pizza before? Did you like it? (Silly question.)

Question of the Day 2: Summer is officially over!! 😦 How was your summer overall? What was the highlight? What did you do?

Question of the Day 3: Do you have any animals? πŸ™‚

Question of the Day 4: What was your best/worst hair cut? Any crazy, hilarious, sad stories? Let me know. πŸ™‚

Thanks for reading!

  1. OMG that pizza looks tasty! I have made my own pizza before. It took some experimenting to get the dough right but when I did it was a-ma-zing! My summerwas great.. too fast, but great!

  2. Your new hair cut is great! I just cut mine four inches, so I’m in the same spot. πŸ™‚ Bangs are the best! Glad to see you blogging again. I still haven’t used that teff flour that you sent me, but I promise I will!

  3. Hope you don’t yell at me for ignoring all the qs of the day in favor of telling you your family is seriously adorable! Like “greeting card” adorable :).

  4. HOORAY for cookie dough! Yours look awesome! And thanks for the link. πŸ™‚
    You have a beautiful family!

  5. Such a cute family! πŸ™‚

  6. Awww.. what a cute picture of you aand your brother! I tried making my own Larabar before… but it totally didn’t taste anything like the real thing! πŸ™‚ My summer was spent interning at an animal rights organization in Philippines! It was very interesting, I learned lots and it strengthened my conviction to be a vegan.

  7. That’s a great post, I enjoyed it a lot. You look great with your new haircut, it’s lovely that you have such a good hairdresser as friend πŸ™‚
Homemade pizza is always amazing, we like making thick crust as well. One can literally put on everything which is left in the fridge.
    have a nice day!

  8. 1. I have made homemade pizza many times, but the last time I made it I made the dough from scratch and it was less than stellar. Yours looks super good! πŸ™‚
    2. Summer is not over for me (yet!) I am actually writing this while on vacation. School for me starts on September 1st.
    3. I have a doggie named Fluffy. (I got her when I was 7 – Can you tell by the name?! LOL!) I also have a Beta fish.
    4. Ugh – My worst haircut was in kindergarden. There was a slight miscommunication between us and the hairdresser – I asked for 3 inches off the bottom and angling on the sides – she layered my whole head. 😦

    Glad your back!

  9. Kelsey!!! So glad you had a great trip and welcome back!!!

CONGRATS on registering for your college classes too!

Love the new haircut, the bangs look beautiful on you!

Your family is beautiful and love the pics, family is the most important thing in the world! U have a beautiful one!

Your pups are so cute! I have a pug puppy named Starla, she is cute and hyper!

LOVE Daiya cheese! I have only tried the cheddar kind!

    Have a great night! xoxo

  10. 1. I like making homemade pizza on pita pockets. I use all natural pizza sauce, shredded cheese, shredded spinach, and sometimes green peppers. Yum!

    2. Whoa there. Summer isn’t over for me yet! πŸ™‚ I still have two weeks to enjoy. Michigan public schools don’t go back until after labor day weekend. So far, my summer has been fantastic. The highlight of my summer was when I went to a science camp (nerd alert) in Pennsylvania.

    3. I have a frog named Freddy. Your dogs are so cute!

    4. Your new haircut looks great! I had bangs in elementary school. Awful. I am not a bangs person.

  11. Sorry you had to say bye to your brother! It’s nice that you two are so close, though. Most brother/sister relationships aren’t.

Congrats on driving for the first time! The first time I drove was in a parking lot, too..but um..I got pulled over by a security cop saying we werent allowed there- hahaha! Whoops.

And yeah, summer’s over but it honestly doesn’t feel any different for me since I stayed at school the entire time anyway. Plus, I’m *ready* for Fall to hurry up and get here!!

  12. i always KNEW you were GORGEOUS i just didnt realize how beauitful ur whole family is!!!! oh how i love family portrait photos ❀ ❀

I love your new bangs! Super cute. I’m also really jealous of how long your hair was before! Gosh I wish mine would grow that long.
And all your eats looks delicious as always!
    Haylee

P.S. Let me know if there is ever anything I can do for your brother while he’s in the MTC. I literally live like a minute away so it wouldn’t be a hassle or anything.

  14. Aww cute family pics! Yes, I LOVE homemade pizza. I always assumed it would never be as good as the REAL thing, but the first time I made it at home, it was even better! It’s just fresher and less greasy πŸ™‚

  15. Yes, homemade pizza is the best! I love it!

Your hair is gorgeous! I’m waiting for my hair to grow out nice and loooong haha

You have a beautiful family by the way!

  16. Hi there, I’m a fellow teen blogger and am glad to have found your site as there aren’t too many of us πŸ™‚

    1. YES I love homemade pizza with a passion! My sister and I make it at least once a month.
    2. My summer overall was fab. The highlight was having a lot of random theme parties with my friends.. like the wizard of oz, haha.
    3. I have a kitty named Shadow who hates me!
    4. My worst haircut is the one I’m sporting right now.. my hair is wavy, and although I told the stylist that, she still cut my bangs when they were wet. So as they dried they got all chunky and super short.. ugh.

Hope you’re having a good week!

  17. I made homemade pizza just the other day, in fact! I made a flatbread crust, turned out really good! It had whole wheat flour, but it wasn’t 100% like yours! I’d love the full recipe for the crust you made when you can get a hold of it! πŸ™‚

I’m doing dual-credit college classes, too! I’m taking Student Success and English Composition 1. But I’m doing mine at the campus, not online. I take all my regular high school courses online. I had my first class on Monday and I’m the only highschooler in the class! I guess a lot of highschoolers in my area don’t know about the dual-credit program! 😦

Love the hair cut! It really suits you! My hair is getting so long and I’m thinking of going for a short cut with layers and bangs too! I remember when I was 8 years old my hairdresser didn’t speak English very fluently. I just wanted her to cut my hair short and keep my bangs the length they were because I was trying to grow them out, but she ended up trimming the bangs too! I was so mad! The last year I’d spend growing out the bangs had been wasted!

Glad to see you’re back and that you had fun in Utah!

  18. i have a little one year old yorkie! she is my baby. i love her more than anything. She is definitely like a member of the family. as for homemade pizza, my dad worked in a pizzeria when he was a teenager and knows how to make awesome pizza. Everytime we make some, its an instant family favorite! And btw, I LOVE pineapple on pizza.

  19. teenagehealthfreak

    i have 2 horses, 1 dog, and 1 cat. i used to have a bird, 2 urtles,…..and a fish. but some have parted. 😦
