Texas and BBQ

…are a match made in heaven!

Well, I’m enjoying my summer break! Unfortunately, I still don’t have a lot of extra time, because now we are starting to pack up our home! I think I told you guys that I’m moving to Utah this summer. If I haven’t told you… I am now. Smile with tongue out It’s pretty crazy, since this the only place I’ve lived and I’ve never moved before. The whole process is new, and it’s quite time-consuming; however, I have had some time to play around in the kitchen! It’s one of my favorite things to do, so I try to make sure that it happens a couple times a week.

One thing I played around with this week was Alex’s BBQ sauce!

Texas is known for two types of cuisine: Mexican and BBQ! I was pretty excited when she posted this recipe, since it fit so perfectly with my Texas summer. If you haven’t made it yet, you need to. I had everything on hand and I loved it. I have to be honest that I added a little bit of stevia, because I wanted that tangy-sweetness, but it is so good! I put it on everything, some of which you can see below.

I topped my sweet potato fries with it, and I also tossed my chickpeas in the sauce. Some roasted broccoli made an appearance a few minutes later, and I also put the sauce on it for fun. Have you ever tried BBQ sauce and mashed avocado together? I tried it with my fries, and wow—it is good. Smile

That wasn’t the only thing I used the sauce for, though. Yesterday I had some kale in the fridge that I needed to use up, and there was about 1/4 cup left of the barbecue sauce. I quickly realized that the two were destined for each other, and on a hot, Texas summer day, this recipe hit the spot.

Texas BBQ Kale Salad

Ingredients:

*This is probably optional, since I would guess that most of you don’t have this particular seasoning. It adds a really great smokey flavoring though, so if you have something similar, use it! Smile

Wash, dry and rip the leaves off the kale. Put them in a large bowl and add all ingredients to the kale. Mix well till everything is evenly distributed and every leaf is coated. The kale should be wilted by now. Let the salad marinate for about 10 minutes and enjoy! Makes 2 very large servings or 3 normal-sized ones.

You can also roast the kale on a lightly greased baking sheet at 400 degrees for about 10-15 minutes. I tried roasted and raw, and I much preferred the salad raw. The flavors are much more pronounced, plus you get more nutrients from raw kale anyway. 🙂

I loved this so much! Whenever I prepare vegetables—whether I roast them, steam them, or put them in a salad—I always make enough for my mom and me. She was napping when I made this though, and it was really hard to save her portion! I wanted to eat it so badly, but I didn’t think that would be very nice. Smile with tongue out

  1. Best summer food – popsicles and watermelon! =] One of my close friends is moving to Utah next month too! I’m not sure which part but wouldn’t that be freaky if you moved to the same place!? Lol. We moved to this town when I was 4 but my dad came first and opened his business, then my momand I followed a year later. But for several years we had a small second home near the south coast in CA so we went back and forth between both. I WISH I could move but I’ll be going off to college in a year anyhow. We moved houses 4 years ago though and did it mostly in just a few days… we could just drive 20 min back and forth.

    Happy memorial day! And I hope you’re okay with moving… It must be hard to leave somewhere so familiar.

  2. Oooh BBQ Kale sounds amazing. I’ve never tried making my own BBQ sauce but I really should. I’m sure it’s a million times better than store bought! I’m looking forward to eating outside with my family and doing lots of traveling this summer. Oh, and no school!

    BBQ is one of my favorite summer foods. I put BBQ sauce on everything! I need to give Alex’s a try though!

    And moving is a pain. I just moved a couple years ago from a house I had lived in all my life. Seriously, how in the world did we stuff so much stuff in our little house?! It is crazy!

  7. I have actually never moved before….I’ve lived in the same house my whole life! But I can’t wait to move away for college….I NEED to go to a big city!!! I am so bored with my hometown lol!

  8. I love all of the WATERMELON!! 😀 It makes me very happy. 🙂 I’ve been wanting to try Alex’s BBQ sauce — I love that you tried it on Kale! Sounds like the perfect food for the summer here!! 🙂 Have you tried it on some grilled tofu? I bet it would be good!! 😀

    • I’ve moved about three times, but I was like 7 years old with our past move. It was hard at first, but then I’d meet new people and keep in touch with my old friends and it all worked out. 🙂 I’m so glad that we are both blogging so I can keep up with you!! 🙂

  10. I’ve recently become in love with BBQ sauce! I don’t eat meat, but I have it with eggs or fish and well as on some veggies like you did. So good!

    I’ve moved once from the place I lived for 16 years and then to a totally new high school and everything my Junior year. I never really got rooted there before moving off to college and still consider my first home “home” whenever people ask where I’m from.

    I love to freeze watermelon or make homemade Popsicles or “ice cream” in my ice cream maker. I also love BBQ sauce on veggies too!
    I’ve never moved before (except from canada to Florida but I was a baby and too young to remember) but I dot blame you for being nervous and excited!

  12. How exciting that you’re moving! The only time I’ve moved in my whole life is to a different house when I was 5. I’ve grown up in the same city my whole life! I am sooo ready to move. I was supposed to move to Colorado this summer but that’s not happening :/

    I know you had mentioned moving but I thought you meant when you go off to college, I didn’t realize you meant now. Texas will miss you very much Kelsey! I’m actually going to be in far western Colorado (like 20 mile or so from Utah) for most of the summer, so we may not be too far form each other!
