Cookies, Cake and Ice Cream

…the HEALTHY way! That’s right: this week I had a Fitnessista Breakfast Cookie, Katie’s Oatmeal Crepe Cakes, and Angela’s Banana Softserve Overnight Oats.

Breakfast cookie: 1/3 cup oats, 1 tbsp peanut butter, 1 tbsp cocoa powder, 1/8 cup almond breeze, 1/2 banana. Topped with a drizzle of coconutย  cream.

Money $hot. ๐Ÿ™‚

Katie’s AMAZING Oatmeal Cookie Crepe Cakes! Oh my gosh, soo good.

Heaven. On. A. Plate. Oh my word. My cakes were topped with strawberries, blueberries and May’s Cacao(nut) Euphoria, AKA Most Amazing Stuff Ever.

Seriously. If you’ve never made her Cacao Euphoria, you NEED to. I would be lying if I said I wasn’t in heaven while eating it and I actually could’ve eaten the whole bowl in one sitting. It’s fluffy, light, chocolate-y and HEALTHY. Yes, it’s a little bit higher in fat because it’s made with coconut cream, but as I’ve mentioned before, my body prefers a generous allowance of fat in my diet so I’m okay with it. Also, because of the agave (or in my case, honey) I wouldn’t eat this every day, but as the occasional snack/treat/dessert, it’s AMAZING.

It kinda reminds me of a truffle filling, and I may frost my next birthday cake with it. ๐Ÿ™‚

This next bit is deviating slightly from the decadent breakfast pictures above, but I wanted to apologize for my serious lack of posts! It’s been almost a week since I last blogged and that is not cool. However, life take its toll and I am a busy girl often without access to a computer; therefore, a lack of posts is what I get.

One of the reasons I was busy this weekend was because I took a trip up to Dallas! I got to spend time with some of my very closest friends and it was wonderful. While I was there, my friend Mckenzie and I also took some pictures together. She is a fabulously talented photographer and we always enjoy having mini photoshoots. Here are a few of the pictures we took. ๐Ÿ™‚

Sorry if you totally don’t care about seeing our pictures, lol. I don’t blame you at all; I’m just trying to find a good balance between blogging about my food and blogging about my life and what’s happening to me. Do you care about what’s going on in my life, or would you rather just see the food/recipes? I totally understand if that’s all you want, so just let me know. What you guys want is what you’ll get. ๐Ÿ™‚

Better get packing! I’m leaving yet again for a week-long camp, so this will probably be my last post till next Sunday.

  2. YES! YES! YES! I love this blog and I love the photos! I usually don’t read twitter or follow people’s personal blogs but you’re really awesome and smart and recommend a lot of great healthy things so naturally I would like to follow what you do because you are a great role model. There are a lot of celebrity teens out there doing weird things and you’re doing great things. I’m not a cook but I tried to make some of the things you posted because I really liked you but then I ended up liking the food. So now I make them because I like the food AND because I like you. If you blog about different interests it might influence others to cook that normally don’t cook, or might influence other people to do the things you do. The photos are awesome and my favorite photo of you is the first one with you reading under the tree. Anyway, I really like you so I like this.

    And to answer your questions:
    -I use Amy’s All-American veggie burgers (or Dr Praeger’s cali, but I like Amy’s the best)
    -For protein shakes I actually use Designer Whey vanilla. I mix 1 scoop with 1 frozen banana, a cup of almond milk, and a few ice cubes and it’s delicious!

    I actually made the Cacao-nut Euphoria this morning.

    I blog about my life and I provide information, tips, and recipes that I think people will like. I blog to record events, journal my thoughts, promote things I like, and hopefully teach someone something that will help them.

    I’d be interested in reading about your life, definitely! That’s part of what makes your blog original. Unless you come up with your own recipes all the time, you can’t ALWAYS parrot other bloggers’ recipes. That’s not to say I don’t appreciate these recipes; I it when bloggers re-post recipes because I know they must be good.
